Honey is  a sweet product made from flower nectar, which is combined with an enzyme secreted by honeybees, then concentrated by reducing moisture in the honeycomb cells.

There are about 320 varieties of honey , which vary in colour, odour and flavour.

Natural, properly preserved honey will not expire. The reason for the longevity of honey lies in its biological makeup. Because of the sugar content and low pH of honey, as well as the bees’ honey-making process, making it difficult for spoiling bacteria to grow. There is  a special enzyme found in the stomach of bee, which breaks down into chemicals inhibiting the growth of bacteria and other organisms.

But honey has to be natural and sealed properly to enjoy its long lifespan.Even though honey doesn’t have an expiration date, it can still undergo natural changes over time it  may “darken and lose its aroma and flavor or crystallize,” depending on changes in temperature.

While changes in aroma or flavor may be less appealing, crystallized honey is completely normal. In fact, it proves your honey is real and not pasteurized! Crystallization doesn’t mean that it has gone bad or expired. It just means that you’ve got the real deal.

In fact, archeologists found honey thousands of years old in ancient Egyptian tombs, and it was still good, their discovery proves that if properly contained, real honey can last for a very, very long time.
